Oatmeal Coconut Bars

Crust Preparation:

  1. Preheat oven to 350° F.
  2. Combine oatmeal, maple syrup and oil together, mix well. 3. Press mixture evenly over bottom of a lightly greased 8 inch square baking pan.

Topping:

  1. Stir together carob chips, nuts, coconut, maple syrup and vanilla, mix well. Spread evenly over oatmeal crust.
  2. Bake for 25 minutes or until golden brown.
  3. Remove from oven and let stand until cool.
  4. Cut into 1x2 inch bars.
